SEASON:
After a quick warm start to the 2018 season, flavours came on very quickly. Late January and early February were very dry so the Pinot Noir for Rosé was amongst the first fruit we picked off the Sexton Vineyard.
Good crisp acidities; soft pink colour and delicious flavours were all there by the second week of February. Despite the warm daytime temperatures, nights were cool, so we did most of our hand picking in the mornings.

VINIFICATION:

  • Whole bunch pressed, using the Sparkling Wine cycle with only free run used – the “pressings” going into our LDR (Light Dry Red).

  • Juice was cold settled before being racked to a stainless steel tank for a long, cool ferment. Once the ferments were bone dry they were given an extremely coarse filtration before bottling in early June.


WHY? 
Yarra Pinot is such an incredible variety for Rosé, the fresh strawberry and subtle musk flavours at the early stages of ripening just work so well, particularly when the fruit is whole bunch pressed. Colour is soft pink but the latent pretty aromatics and fresh crisp palate make it so “smash-able”.  It’s a great partner to so many items on the menu.
