Warmer, faster (four weeks as opposed to six weeks to pick all the Chardonnay) and earlier than 2017. We made the decision to pick at lower sugar levels to retain the fresh natural acidity in the Chardonnay grapes. The resulting wine has lower alcohol but similar acid levels to the 2017. What’s surprising is the fresh melon and citrus flavours and incredible energy of this wine - a beautiful drink now, but a wine that will improve with a little cellaring.

100% hand-picked, all fruit is chilled overnight to 12 deg C
Whole bunch pressed, fermentation on full juice solids, wild yeast.
Fermented entirely in 500L French puncheons – 10% new, 90% older. No lees stirring
10% of the parcels (a few of the higher altitude wines) went through spontaneous malolactic fermentation, which gave the palate a little extra width.
Matured in French oak – 10% new, 90% older – for only 7 months.
Coarse filtration at bottling.

Kingfish sashimi, miso, soy sauce dressing; fresh goats curd and olive tapenade on grilled sourdough; roast baby chicken, preserved lemon and roast garlic.
